Carrot And Tomato Soup (for 4 people) 4 medium carrots 8 medium tomatoes 1 tablespoon of butter 1/2 packet of (herb) cream cheese salt some diced feta Dice carrots, put in saucepan together with the butter and just about cover with water. Boil for 10 to 15 minutes. Skin tomatoes, dice and add to carrots, boil for another 5 to 8 minutes. Cream in blender and add cream cheese and salt to taste. Put some feta dices into each soup bowl and pour soup over, serve. |
